Cooking with Peppers

Okay, I probably sound like a total noob or a goof but I don't know how to cook with peppers very well. I don't like to eat them directly usually, unless I'm adding it into some sort of meal (Salsa!).

For instance the other day I felt compelled to make a catfish dinner and flavor it with my usual New Orleans blackened rub and lemon seasonings, but also to cover it with freshly sliced red peppers. I baked it like that and it was really good. I took the peppers off after it was finished cooking (cuz they were dried out from baking obviously).

My problem is, I don't really know how to use them outside of that since my family doesn't cook with them.

so, anykind of peppers. red, yellow, green or chile...it's all fine.

So question of the day, how do you ladies use them?

I love cooking with peppers....Here is a recipe I use when I want something a lil different.

Ingredients:

Sweet Sausage- u must take it out of the casing in order to cook it properly
Peppers- red, green, and yellow
Onion- I usually put in food processor but this is optional
Zuchini- sliced thinly
Garlic-fresh chopped clove or 2
Pasta- I use Penne? but you can use just about anything, its good w/Angelhair pasta as well.

Preperation-
Chop the peppers, Zuchini, Garlic, Onion
Remove Sausage from casing(yes this is gross, but it is necessary)

Cook
In a medium sized fry pan, cover the bottom with a thin layer of olive oil, then start by adding the sausage, cook that for a few moments, adding peppers and onion first, then zuchini, and finally the garlic(if you add this too early, it tends to burn and lose flavor). Do not drain this, it makes a nice sauce for the pasta.

Boil the pasta and drain.

Once the sausage mix is done to your liking, place pasta back in the pan you cooked it in, and add the sausage mix.

Voila! You have a nice meal.

FOr the above recipe, you can substitute chicken for the sausage, it is still very tasty. As for any other meats, I have not tried it yet.

You could also try stuffed peppers. Sorry I don't have any recipes for you but I have put savory rice in them and cooked them in the oven..

Stuffed Peppers

Stuffed peppers are really easy -- you can't go wrong.
For example, you could stuff them with brown rice and black beans, and sprinkle cheddar cheese on the top. Mmmmm. Very Happy

I adore bell peppers, especially red. I usually chop them up to cook in stir-fry or curry, or raw in salads or with dip, or in soups and stews.
