Instructions:
For the custard, place the milk, sugar and vanilla ina saucepan and bring to a high simmer. Whisk egg and cornflour in a bowl, then keep whisking as you pour in a little of the hot milk. Add to the pan, whisk to combine, then cook over medium heat, whisking constantly, until custard comes to a boil. Boil for 30 seconds. Transfer to a clean bowl and cool completely.
Stir mascarpone and cream into custard. (If mascarpone is thick, mix with 4-5 tablespoons of custard first). Take 4 large glasses and put 2-3 tablespoons of custard in each. Break up a sponge finger biscuit and place on top of the custard, 1 per glass. Drizzle with marsala, then top with jelly and 5 cherry halves. Repeat layers, finish with custard and top with whipped cream. _________________ Satin
